Ingredients:

1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
2 cups grated carrots (about 3-4 medium carrots)
1/2 cup chopped walnuts or pecans (optional)
2 large eggs
1/2 cup vegetable oil or melted coconut oil
1 teaspoon vanilla extract

Instructions:


Preheat Oven and Prepare Muffin Tin:
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups lightly with oil or cooking spray.
Mix Dry Ingredients:


In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
Prepare Carrots and Nuts:
